Lunch can be a challenge for many of us. Many of us are working through lunch and if we haven’t packed something healthy to bring with us, then we may skip it altogether, order out or grab something quick (and not so healthy) from the coffee shop or vending machine. It’s always going to be a good idea to think about each meal of the day, because if you are getting the nutrition you need at dinner but not in the rest of the day, then you could simply be undoing all of your hard work. With that in mind, here are some easy lunches that you can make which pack a lot of nutrition into each and every bite.

Crunchwraps

One of the best ways to approach this is to have some meals and snacks you can make where you are able to pretty much add whatever you like into the mix, so that you can make sure you are including ingredients that give you some of the things you have been missing in other meals of the day. A good example is a crunchwrap, which you can make with pretty much whatever you want, whether it’s a crunchwrap supreme with spicy beef and veg, or an all-vegetable option instead. It’s up to you.

Ginger Miso Beet Salad

Here is a supremely healthy lunch that you can make in about twenty minutes, and which is always going to be delicious as well as incredibly healthy. A ginger miso beet salad has so much nutrition in it that you are going to find it incredibly good for you, and there is a chance that you will find it hard to move away from this on to other lunches as it is just that good. It has a way of giving you loads of energy, so it might be a good option for lunch on hump day, or whatever part of the week you tend to feel the slump.

Chicken & Avocado Salad

If you are looking for something you can put together in about five minutes, then you might want to make yourself a chicken and avocado salad instead. This has quite a lot of the nutrition that you need halfway during your day: you’ve got your protein, of course, as well as many of your important vitamins and minerals as well. It is also generally quite filling, and you have some good healthy fats in the avocado which are going to sustain you for the rest of the day too. If you prefer, you can add this to a wholemeal sandwich to beef it out even more and make it a little more calorific - if you are having a particularly active day, for example.

Those are just some of the easy lunches you might want to learn how to make, which are going to give you a lot of nutrition every single time you eat them. These are the lunches that can help you to get through the day until dinner time, and yet they are so easy and simple to throw together too.
